CHIA SEED PUDDING PARFAIT

I’ve been eating so much chia seed pudding its practically coming out of my pores.


This parfait is perfect for breakfast, a snack or dessert. Sometimes I have it twice a day when I'm craving something sweet.


Another major benefit? Chia seeds contains tons of fiber and fills you right up!


INGREDIENTS:

6 tbs chia seeds

2 cup nut milk ( I like to use Oat milk, almond milk or macadamia nut milk)

2 tbs honey

1 tsp pure vanilla extract

1/2 tsp ground cinnamon

a pinch of salt


INSTRUCTIONS:

Mix everything throughly. You want to ensure there are no lumps as chia seeds sometimes clump together. Cover it and put it in the fridge for a minimum of 4 hours. I like to leave mine over night and have it for breakfast in the AM.


The chia seeds will expand and get gelatinous. Note: you can add a little splash of more milk if your consistency is too thick.


Now comes the fun part: TOPPINGS!


The sky's the limit, pick your favorite toppings and make it your own. I change mine up almost every time.



Here are some suggestions:


- Fresh fruits

- Granola

- Chopped nuts

- Freeze dried fruits

- Yogurt

- Peanut butter/ Almond butter



PS: if you're looking for that "dessert" type of feeling, use frozen fruit and let it melt into the chia parfait.
