Okay, ya’ll ready for the most refreshing summer salad?
It’s healthy, colorful, and most importantly… delicious in every way.
I mean, how beautiful does this look??
Here’s what you’ll need:
2 bunches green onions
1 red bell pepper
1/2 red onion
1/2 cup pistachios
3/4 cup sliced almonds
2 packs of instant ramen
1 large can mandarin oranges (canned)
Optional: Jalapeños and red pepper flakes if you like it spicy
1/2 cup olive oil
1/4 cup vinegar
1/4 cup sugar
Sauce packets from ramen
Juice from canned mandarin orange
Salt and pepper to taste
Sometimes I like to add shrimp. Sometimes chicken. Or whatever is left over from the night before.
Heat up a pan and add olive olive. Toast the ramen noodles until desired crispiness.
Cut veggies and throw everything into a bowl + mix it all up!
For the dressing, I like to mix it in a separate bowl. Add olive oil, vinegar, sauce packet from the ramen, and juices from canned mandarin oranges.
Add everything together and enjoy!
