Okay guys, this recipe is so freakin delicious and easy to make. It only took 10 minutes to prepare, 50 minutes in the oven, and 30 minutes of photos lol (because it's too damn pretty to not instagram).
CRUST AND CRUMBLE INGREDIENTS:
1½ cups white whole wheat flour
1½ cups regular oats (not the instant kind)
½ cup honey (or maple syrup)
6 tablespoons unsalted butter, melted
¼ cup brown sugar
1 teaspoon ground cinnamon
STRAWBERRY FILLING:
2 cups sliced fresh strawberries
1 cup fresh raspberries
1 tablespoon fresh lemon juice
1 teaspoon vanilla extract
1 teaspoon white whole wheat flour
Instructions
Preheat oven to 350.
Line the bottom of an 8×8 pan with parchment paper and spray with cooking spray
For the crust & crumble: add melted butter, white whole wheat flour, regular oats, honey, brown sugar, ground cinnamon and salt. Mix it all up!
Take out 1 cup of the mixture and put it aside- this will be your crumble.
Add the remaining mixture to the prepared pan. Spread it out evenly by pressing into the bottom of the pan so the crust is in an even layer.
For the Strawberry Filling: to a small bowl add strawberries, lemon juice, vanilla extract, and white whole wheat flour. Toss to combine.
Add the strawberry mixture on top of the crust and spread out evenly.
Evenly sprinkle the crumble mixture (that cup that you set aside earlier) over the top of the bars.
Throw it into the oven for 50 minutes.
Remove and let sit for 10 minutes.
Cut and enjoy!
